No Bake Cherry Cheesecake

One of the best things about this cherry cheesecake recipe is how easy is to make it.

Not only really easy, but this recipe is a no bake one, you heard it right 🙂 Perfect for crazy, hot summer days, when you don’t want to come close to your stove top or even worst, the oven. My no bake cheesecake recipe is just perfect as an easy summer dessert.

Ingredients for No Bake Cherry Cheesecake

  • fresh cherries – as topping
  • graham crackers – to make the crust
  • butter
  • cream cheese mixture: cream cheese and mascarpone – for filling
  • sugar

Come on, there is no better summer dessert than a bowl with fresh cherries! The only thing would make it better, is to actually pick your own. Have you ever picked your own cherries? We did and we loved it 🙂

For this brief period of time when we can enjoy them, I am trying to include cherries in pretty much every dessert I am making. Usually I go for cherry ice cream sandwiches, cherry frangipane tart or cherry mini pavlovas

How to Make Cherry Cheesecake

Preparation takes only 20 minutes and that’s pretty much everything when it comes to this no bake cherry cheesecake.

  1. We start with making the crust for the cherry cheesecake: mix melted butter with crushed graham crackers and add on a prepared tin, pressing to form the crust.
  2. Refrigerate while you prepare the filling for cherry cheesecake.
  3. To make the filling for cherry cheesecake, start by adding gelatin to warm water to dissolve and them mix cream cheese 9preferably softened cream cheese), mascarpone and the other ingredients.
  4. Pour the filling over the graham cracker crust and place the cheesecake in the fridge for around 4 hours.
  5. Remove it from fridge and serve with fresh cherries as topping and some powdered sugar.

You can always whip up some heavy cream and decorate the top with whipped cream and fresh cherries

No Bake Cherry Cheesecake

No Bake Cherry Cheesecake

No Bake Cherry Cheesecake recipe with graham cracker crust, creme cheese & mascarpone and fresh cherries as topping! Decadent, really easy summer dessert.

Ingredients

  • 12 graham crackers
  • 1/2 stick unsalted butter, around 50g, melted
  • 2 teaspoons gelatine
  • 2 packs cream cheese (8oz/ almost 450g) at room temperature
  • 3/4 cup sugar
  • 3 teaspoons orange zest
  • 8oz/ 230g mascarpone
  • 2 cups fresh cherries
  • powdered sugar, for dusting

Instructions

  1. Lightly grease a rectangular loaf tin. Line the base with baking paper, trying to extend half way over the two long sides.
  2. Break the biscuits in smaller pieces and process in a food processor until finely chopped. Add the melted butter and process until combined. Using the back of a spoon, press the biscuit mixture over the base of the tin. Place it in the fridge while you make the filling.
  3. In a small bowl, add 2 tablespoons cold water. Sprinkle gelatin over and mix. Place the bowl in a pan with hot water and whisk until totally dissolved. Set aside and cool for a short time.
  4. In a large bowl, using a hand mixer, beat the cream cheese, sugar and orange zest until smooth. Add mascarpone and the gelatin mixture and beat to combine.
  5. Pour over the biscuit base and refrigerate for about 4 hours, until firm.
  6. Serve topped with whole cherries and dust some confectioners sugar on top.

Gorgeous looking cheesecake you've got there! I've never met a cheesecake I didn't like, and no bake versions have a special place in my heart. I love the whole cherries on top, too - they are one of my favorite fruits, and I wouldn't mind just eating them right off!

What a delicious and beautiful cheesecake, Oana! Although I am still turning on the oven, I love a good, Summer no bake cheesecake! The addition of marscapone sounds just like what I love! And those gorgeous cherries... I can't get enough! You mentioned cherry frangipan tart... YES please!! It sounds fabulous!
