Belgian Endive Salad

The last stop for today is in Belgium..more or less. Exactly, in my kitchen, where I have made my favorite summer salad, Endive Salad with beef steak, croutons and salad dressing. Do you like endives? From what I have heard it is love or hate them. Don’t know anyone who kinda likes them 🙂 I absolutely love them! I could have this salad each and every day and still craving for some more the next day. Hope you like endives too!

The salad is my personal adaptation of a Caesar salad. I have selected just ingredients I really love: endives, romaine leaves, some radicchio, grilled beef strips, homemade croutons and a fresh dressing to go with. It is so refreshing and easy to make, especially on a hot day like we had today.

Belgian Endive Salad

Belgian Endive Salad – World Cup Recipes
Ingredients
  • 1 pound beef fillet
  • 3 endives
  • 1 cup mixed romaine and radicchio
  • 2 slices baguette
  • salt and pepper
Dressing:
  • 1/4 cup extra virgin olive oil
  • 1 tsp Worcestershire sauce
  • 1 tbs lemon juice
  • salt and pepper
Instructions
  1. Cut the baguette slices into cubes.
  2. Season the beef fillet with salt and pepper. Grill on both sides for 4 minutes. Allow to rest 15 minutes before serving. Add in same pan to brown the bread cubes.
  3. To make the dressing: mix the Worcestershire sauce, olive oil and fresh lemon juice. Season with salt and pepper.
  4. In a bowl, add the sliced endives, chopped romaine and radicchio, the beef strips, croutons and the dressing. Mix and serve!
  5. Enjoy!!
