We were in New York over the weekend and while walking through Central Park. I grabbed a cup of double espresso and a pumpkin brioche with it! That brioche has started everything…I loved it, was deliciously moist but was missing something….cinnamon 🙂

The dough is really easy to work with and you have to let it sit just for a hour and a half. It doesn’t require a lot of ingredients, just pumpkin puree (I used The Organic Pumpkin Puree), butter, flour, sugar, dry yeast and of course cinnamon and nutmeg.

Mine isn't rising at all and I'm curious about the lack of liquid. I added more puree and a smidgen of water just to get it to be dough of any sort. Is something missing off the recipe?

Hi Francine, not sure why yours is not rising, usually has to do with the dry yeast not being activated. It has to do with the temperature of the melted butter, if it's too hot, the yeast will be killed, if it's cold will not get activated. The melted butter has to be warm for the yeast to work its magic. Just to double check, you have added 2 large eggs to the mixture and 1/2 US butter stick (1/4 cup melted butter) Hope it works out for you :)

You have salt in the recipe instructions but not on the list of ingredients. Also,is the dough supposed to be very dense? I am in the proofing process at the moment and it took a very long time to get a cohesive dough to form. Is this typical or did I miss something? It smells divine!

Nommm.... I love that it is a broiche with pumpkin. Looks super moist. I feel like I need to lie down in a pile of golden and orange leaves now. One hand with a slice of this bread, and the other hand with a cup of hot coffee. :)
